Let’s start from the beginning. In this interactive workshop you will learn how to recognize the different varieties of Mexican peppers, and their uses in making hot sauces, dry rubs, and marinades.

Mexican cooking is known for its spicy hot sauces, but not everything related to chile peppers is a fiery tongue-scorching inedible mess. Chef Paola and chef Adriana will show you how everything is about balance, and even the spiciest of the chiles can be enjoyed at your table.

Experience Mexico through its culinary traditions and learn how to put together a wonderful Summer Taco Fiesta; to be paired with your favourite Tequila, and the incomparable sound of the mariachi band.

Chefs Paola and Adriana know how to throw a party; they’ve been doing it for several years, and now they will show everything you need to know to put together the ultimate Mexican Summer Fiesta. You will blow your guests away at your next backyard party with a handful of tips and resources, and a well planed menu that you will be able to execute at home.

AUGUST 23

BAROQUE MEXICAN CUISINE: CHILES EN NOGADA

In this intensive hands-on workshop, you will experience first hand the many secrets and tips that will allow you to create a dish that is fit for an emperor. Surprise your guests and family with the legendary tale of General Iturbide and how he signed Mexico’s independence from Spain after 11 years of war.

In preparation for  Mexican Independence Day, you will learn how to make one of the most emblematic dishes of Mexican cuisine. Chiles en Nogada are an extravagant composition, and for good reasons; according to the legend, they were created for the first time to celebrate General Agustin de Iturbide, a war hero who won the independence from Spain, designed the first Mexican flag, and eventually became Mexico’s emperor for a brief period.

SEPTEMBER 27

MEXICO CITY: STREET FOOD

Mexico City is a fascinating place from any angle, and its gastronomy is not the exception. In this workshop you will experience the city through its many street food establishments.

Mexico City is a living organism, always in motion, adapting, and evolving. Its inhabitants never stop as the city demands sleepless days and nights and to constantly move with it, sometimes spending 3-4 hours in your daily commute, and to have all your meals on-the-go.

Greatly influenced by its pre-Hispanic heritage, the colonial era, and the influence from other states and countries, Mexico City’s eclectic lifestyle will take you on a culinary journey like no other. You will learn how to make Tlacoyos (a pre-Hispanic stuffed corn patty topped with cactus and onion), Pambazos (a colonial era cultural fusion chorizo sandwich dipped in guajillo pepper), and a modern take on coffee and horchata.

DÍA DE MUERTOS

The Dia de Muertos ( Day of the Dead) celebration has rapidly grown in Toronto as part of our multicultural heritage. You will learn how to put together a mesmerizing menu where the sophisticated molé sauce, and versatile tamales play an important role. Traditions from Mexico City and neighbouring states will be discussed.​

POSADAS COOKING

Las Posadas is a very important tradition in Mexican Culture. Families and friends take the opportunity to remember the Nativity story and get together before all the Christmas stress kicks in. There is traditional and ceremonial cooking involved, of course, and you will learn how to cook from scratch tamales and ponche (a fruit concoction usually spiked with rum).
